Khat-Mithu Lila Tameta Nu Shaak......Gujarati style.
(Sweet sour Raw-Green Tomato Curry)

My aunt in our village was one of the best cooks of Gujarati food I have ever come across. Stuffed baby raw tomatoes , Okra , Baby Brinjals and potatoes were her speciality. This dish is a tribute to her from my side. Bless her soul.
This is a sweet-sour curry. Now a days, we get hybrid tomatoes which are not very sour and are not good for this recipe. So please select a sour variety.

COOKED TOMATOES

Leela Tameta Nu Shaak

INGREDIENTS

Raw Tomatoes(Sour) 300 gms
Kothmir/cilantro.....2 tsp (For stuffing
Kothmir.............For Garnishing
chickpea flour/Besan.1/2 cup
coriander+Cumin powder 1.5 tsp
Turmeric............a pinch
Chile powder........3/4 tsp
Asafoetida..........1/4 spoon
Salt................3/4 tsp or to taste
Oil.................1/2 ladle
Jaggery/Brown sugar.............3 tsp or 4 as per sourness of Tomatoes

Tempering

1/4 cup Oil
Mustard...1/4 tsp

Indian 1 cup means 100 ml.The measurement is Indian



Method Of Preparation

Prepare dough using all the ingredients (except Tomatoes).

The consistency should be slightly firm as Paratha dough.

No water is to be used for preparing stuffing masala dough.

This is because tomatoes will leave water when stuffed.

Check for salt and spices.

Make top cross cuts on each green tomato and carefully stuff each
tomato. Leave the stuffed tomatoes for about fifteen minutes.

Place the tomatoes carefully in a non stick pan and then give Tadka of Just Mustard .
Add very little wate (1/2 to 3/4 cup) along the sides without disturbing stuffed tomatoes.

Cover the pan and let it cook in steam and also own juices for about ten minutes.
Check after ten minutes. If tomatoes are cooked, remove from fire, Garnish with Kothmir.

Enjoy with Rotis, Parathas or poories.

Variation:
Some people use Garlic also in stuffing but its not common.
