METHI-NA-THEPLA (fenugreek flat bread)

INTRODUCTION

Methi-Na-Thepla is a wholesome, tasty and filling version of Parathas.They are not refered to as Parathas but are called Theplas. This is a Gujarati specialty. This Thepla variety is spicy hence you can enjoy as it is or you can use regular side dishes or Tea or coffee if you want.

Methi Na Thepla

INGREDIENTS(enough for 15 Thepalas)

2 cups of Whole wheat flour
1/2 cup Chickpea flour/Besan
3/4cup of chopped Fenugreek leaves
2 Green Chilies thinly sliced
1/4 cup Curds
1.5 spoon Salt (to taste)
1/2 Spoon Chilli powder
1 spoon coriander+cumin powder 1/2 sp. each
1/2 spoon Turmeric powder
1/8 spoon Asafoetida powder
1 ladle of oil for making dough
2 oz. of oil for Tawa top frying of parathas
Enough water for dough

METHOD OF PREPARATION

Take a bunch of Fenugreek (Methi) greens.Pluck leaves and wash the dirt away.Chop the leaves set aside.

Add Oil and salt to wheat and chickpea flours and slowly rub between two palms and mix the whole thing thoroughly. Now add Turmeric powder, Chilli powder,coriander and cumin powders, Green chilies and Asafoetida and Chopped Fenugreek and curds now. slowly knead the dough. Make sure that the dough is not hard or not soft like that of Rotis or poories. Keep it for 30 minutes.

Make 15 equal portions of the dough and ball them up and keep covered with wet cloth or rub oil over each ball so that they don't dry. (Taste for salt now)
Now roll the dough on a rolling stone or flat surface and make a round roti of at least six inches diameter.

Place the rolled thepla on a Roti Tawa/gridle and prepare the paratha either with oil spread on the baked surface or you can use Ghee. Please use medium flame to fry to a Golden shade. The shallow frying has to be done on medium/slow flame to ensure proper cooking of fenugreek .

This tastes great as it is or you may Serve with Tadka Dal or any Dal or any side dish if you prepare them for dinner or lunch. Serve with tea or coffee or curds if you are serving as breakfast or evening snack. .

  1. Can you adobt me [:P]... a little old for that now, but the stomach is still young ;) To be quite honest I have to make sure to learn each recipe off this Blog of yours and get to be half a good cook than you.. life will sure be good and keep me out of trouble :)
